Why I bake
Maamoul moulds come from my aunt in Tripoli and the dough only works with fine semolina rested overnight. Rush it and the pattern collapses in the oven.
My proudest bake
The date maamoul. Dates cooked with orange blossom, pressed in wooden moulds, and baked pale so the pattern stays sharp.
