Why I bake

I roast nothing myself, I just buy good kopi beans from a shop on Dunlop Street and build bakes that taste of the coffee rather than of sugar.

My proudest bake

The cold brew brownie. Coffee steeped eighteen hours, then reduced, so the chocolate tastes bitter in the right way.
