Why I bake

Steamed buns are unforgiving. Too much proof and they wrinkle, too little and they are tight, so I stand there and watch the basket.

My proudest bake

The egg tarts. Puff pastry folded three times the night before and custard strained twice so it bakes without a single bubble.
