Why I bake

Mochi texture changes by the hour, so I make it in the evening and hand it over the next morning. I would rather sell out than sell it stale.

My proudest bake

The mochi donuts. Piped in rings so they pull apart into eight, fried to order and glazed thin so they stay chewy.
