Why I bake

I juice pandan from the pots on my corridor the night before I bake, because bottled essence tastes flat. The whole cake stands on that one step.

My proudest bake

The pandan kaya chiffon. Twelve egg whites folded by hand and kaya stirred low for an hour until it ribbons.
