Why I bake

I bake for the hour between waking up and going anywhere. Scones need cold butter and a light hand, so I work fast and only make what one oven holds.

My proudest bake

The buttermilk scones. Butter cut in by hand, dough barely worked, straight into a hot oven so they rise tall and flake apart.
